This raw vegan carrot cake is a delight for your eyes and a true taste explosion for your taste buds and happens to be gluten free too.

Decorated with edible flowers in matching Dutch flag colors, red, white and blue, this definitely is a celebration cake. And you know what I find best, besides the taste of course, it’s a fully plant based cake! Just the way I like it.

That said I’m all set for the biggest birthday party a year:  Dutch Queens day.
The royal family is  invited to my cup of tea, to join me having a piece of this orange raw carrot cake. I’m sure they will find time when they pass our house as it is hart to resist this delicious raw vegan paleo beauty.

Carrot Cake - raw & vegan

Bereiding: 30 min. + 2-3 uur week tijd.
Koel tijd: 1 a 2 uur + overnacht.

Porties: 8-10.

Wat heb je nodig:

Citroen Creme:
- 350 g cashewnoten, bij voorkeur gedurende 2-3 uur geweekt.
- 100 ml ahornsiroop.
- 3 eetlepels citroensap.
- 2 eetlepels gesmolten kokosolie.
- 1 theelepel vanille-extract.
- 1/4 schil van een (ongewaxte biologische) citroen.
- Beetje water zoveel als nodig, ik heb ongeveer 45-50 ml gebruikt.

Beslag
- 500 g wortelen, super fijn gemalen in de keukenmachine.
- 200 g wortelen, met de hand grof geraspt.
- 280 g boekweit meel.
- 200 g gehakte Medjoul dadels.
- 50 g gedroogde ananas.
- 50 g gedroogde kokos rasp.
- 1 eetlepel ahorn siroop.
- 2 eetlepels citroensap.
- 1 theelepel gemengde- / koek-kruiden (een mengsel van gemalen kaneel, alle kruiden / piment, gember en kruidnagel).
- Springvorm van 20 cm ø.

Hoe te bereiden:

1. Om het glazuur te maken mix je alle ingrediënten in een hoge snelheid blender tot je een glad mengsel, voeg zo weinig mogelijk water.
Dat is het, klaar en erg lekker!

2. Voor het beslag schil en snij 500 g wortelen in stukken, gooi in de keukenmachine en puls tot super fijn.

3. Voeg vervolgens alle resterende ingrediënten toe, behalve de 200 gram grof met de hand geraspte wortel en meng de keukenmachine tot een glad en vrij stevig beslag.

4. Meng met de hand de grof geraspte wortel erdoor. Klaar is je beslag.

5. Bekleed een springvorm op de bodem met bakpapier.
Een snelle en gemakkelijke manier om dit te doen is door een vel bakpapier over de bodem te leggen, plaats de ring er bovenop en sluit de vorm. Op deze manier heb je snel en gemakkelijk een strak beklede taartbodem.

6. Vul de vorm met de helft van de wortel mengsel en druk stevig aandrukken. Verdeel 1/3 van de crème hier bovenkant en plaats in de vriezer totdat de crème laag solide is.

7. Verdeel de resterende wortel mengsel hier weer boven op en druk stevig aan. Zet weg in de vriezer gedurende 1 nacht.

8. Verwijder de taart uit het blik en bedek het volledig met de resterende crème.

Voor een mooie 'eye candy' decoratie heb ik eetbare bloemblaadjes, kokosnoot schaafsel en walnoten gebruikt.
Maar je kunt natuurlijk variëren zoals je wilt bv met pistache en gedroogde cranberry's of verse bloemen.

Bewaar eventuele rest punten in de vriezer.

Carrot Cake - raw & vegan

Preparation: 30 min. + 2-3 hours soaking time.
Cool time: 1 a 2 hours + overnight.

Serves: about 8-10.

What you need:

Lemon Frosting:
- 350 g cashew nuts, preferably soaked for 2-3 hours.
- 100 ml maple syrup.
- 3 tablespoons of lemon juice.
- 2 tablespoons melted coconut oil.
- 1 teaspoon vanilla extract.
- 1/4 zest of a (organic unwaxed) lemon.
- water as needed, I used about 45-50 ml.

Batter
- 500 g of carrots, super finely ground in food processor.
- 200 g of carrots, coarsely hand grated.
- 280 g buckwheat flour.
- 200 g chopped Medjoul dates.
- 50 g dried pineapple.
- 50 g dried coconut grater.
- 1 tablespoon maple syrup.
- 2 tablespoons lemon juice.
- 1 teaspoon mixed spice (a mixture of ground cinnamon, all spice/ piment, ginger and clove).
- springform 20 cm ø.

How to prepare:

1. To make the frosting blend all ingredients in a high speed blender until you have a smooth mixture, add as little water as possible.


That’s it, ready and very yummy!

2. For the batter peel and cut 500 g carrots into chunks, throw in food processor and pulse until super fine.



3. Then add all remaining ingredients, except for the 200 grams coarsely grated carrot, and mix in the food processor into a smooth and rather firm batter.



4. Mix in the coarsely grated carrot by hand
. Ready is your batter.


5. Line a springform on the bottom with baking paper. 

A quick and easy way to do so is by placing a sheet of paper on the bottom, put the ring on top and close the form. This way you quickly and easily have a tight lined bottom.


6. Fill the form with half of the carrot mixture and press firmly. 
Spread 1/3 of your frosting on top and freeze until the icing layer is solid. 



7. Spread the remaining carrot mixture on top and press firmly. 
Place in the freezer for 1 night. 



8. Remove the cake from the tin and cover it completely with the remaining frosting.

For a nice 'eye candy' decoration I used edible flower petals, coconut shavings and walnuts.
But you can vary as you like of course for example with pistachio and dried cranberries or fresh flowers.

Store leftovers in the freezer to keep them good for longer time.
