Fig & Beet Summer salad

The color of love is the theme for this vibrant Summer fig and Beet salad. The almost fluor pink like reddish of summer beet is just extraordinary beautiful. Mixed together with ruby red pomegranate and soft sweet fresh figs this easy thrown together quinoa salad  is just a charm on your plate.

The slightly earthy taste of summer beets and quinoa go along very well with the nut free green pesto dressing that is used in this salad. Combined with a variety of fresh greens it’s a festive colorful  family meal with lots of love and little effort in the kitchen.

Groene pesto zonder noten - raw

Keuken gereedschap nodig: blender of staaf mixer.

Voorbereiding: 10 min.

Porties: 1 pot

Wat je nodig hebt:
- 200g (wite) quinoa.
- 2 zomer bietjes, circa 400 g.
- 75 g rucola.
- 1 flinke hand platte peterselie, fijn gehakt.
- Pitjes van 1 granaatappel.
- 3 verse vijgen, in vieren gesneden.
- 1/2 portie nut free pesto, link staat in de tekst boven.

Hoe voor te bereiden:

1. Kook de quinoa en laat daarna afkoelen
Hoe kook je quinoa het beste: 200 gram in 400 ml water. Zet de pan zonder deksel op hoog vuur en kook todat het water nagenoeg verdampt is en je kraters in de quinoa ziet. Plaats nu een deksel op de pan en laat op laag vuur nog 5 min staan.

2. Was de bietjes, snij de top en kontjes eraf en schaaf op de mandoline in dunne plakken.

3. Roer de nut-free pesto dressing door de quinoa. Voeg de gehakte peterselie erbij en roer goed door elkaar. Voeg nu de bietjes en granaatappel pitjes erdoorheen en als laatse de vijgen.

Eet smakelijk.

Fig & Beet Summer salad

Kitchen tools needed: mandoline.

Preparation time: 30 min.

Servings: 4-6.

What you need:
- 200g (wite) quinoa.
- 2 summer beetroot, about 400 g.
- 75 g arugula.
- 1 good handful of flat-leaf parsley, finely chopped.
- Seeds from one pomegranate.
- 3 fresh figs, quartered.
- 1/2 portion utility free pesto link in the text above.

How to prepare:

1. Cook the quinoa, once cooked set aside to cool.
How to cook quinoa best: 200 g in 400 ml of water. Put the pan on high heat without a lid and cook untill the water has almost evaporated and you see craters in the quinoa. Place a lid on the pan and simmer on low heat for 5 min.

2. Wash the beetroot, cut the top and bottoms off and slice on the mandolin into thin slices.

3. Stir in the nut-free pesto dressing with the quinoa. Mix in the chopped parsley well. Add the beetroot and pomegranate seeds in and last the figs.
